Easy Mushroom Spinach Gnocchi

Gnocchi is a family favourite and the gluten free packages from the supermarket are perfect for everyone. Bring out your inner Italian. So simple, healthy and super delicious!! 

If you are big eaters, just double the spinach and mushrooms. 

INGREDIENTS

  • 1 package of gluten free gnocchi
  • 2 cups sliced Portobello mushrooms
  • 1 bag baby spinach (about 4 cups)
  • 3 tablespoons butter
  • 3 garlic cloves finely chopped
  • 3 tablespoons Parmesan
  • Salt and ground pepper to taste

METHOD

  • Bring a large pot of lightly salted water to the boil and add the gnocchi.
  • Boil for 2-4 minutes until the gnocchi floats to the surface of the water. Drain and set aside.
  • Melt the butter in a large frypan over a medium heat.
  • Add the sliced mushrooms and saute for 2 minutes.
  • Add the spinach and  garlic to the pan and combine with the mushroom and melted butter until spinach is wilted. 
  • Add the gnocchi and combine well.
  • Stir through the Parmesan cheese and hey presto:) Just delicious and very filling. Serve with a green salad dressed with a lemon vinaigrette and some your favourite crusty bread.
