Breakfast Tart

Sometimes breakfast can be tough and lots of us grab a coffee on the go. Not anymore!! Make one of these gorgeous tarts full of fibre, fruit and flavour. Make it in advance and much on it each morning before work. Healthy and divine!!

What you need:

  • 1 tbsp chia seeds
  • 120 g mixed nuts or seeds ( 50/50 works best)
  • 65 g rolled oats 
  • 60 g melted coconut oil 
  • 2 Tbsp honey (alter the sweetness to taste)
  • 1 tsp vanilla
  • 1 tsp ground cinnamon
  • 1 tsp ground cardamom
  • tsp ground ginger
  • 1 tbsp water 

To serve:

  • Plain yoghurt ( coyo works great too)
  • Fresh fruit of your choice to top

What to do:

  • Preheat your oven to 180℃. Grease a round or rectangle tin.
  • Blitz the chia to a fine meal in a food processor
  • Add the nuts and seeds and blitz to desired consistency. 
  • Now add the rest of the dry ingredients, oil and honey and pulse to just combine and break up the oats. It should form a dough that sticks together when pressed.
  • Press into your tin with wet finger tips and bake for 15 minutes.
  • Remove from the oven, allow to cool until warm, then remove from the tin.
  • Top with unsweetened yoghurt and top with fresh fruit (fig, blueberries, strawberries, kiwi-fruit, mint, peaches, nectarines etc) or even stewed fruit.
