Choc-orange dessert balls

Get cooking cos these are amazing!! Filled to the brim with antioxidants, vitamins and minerals and topped off with dark chocolate for that little bit of healthy luxury we all crave. You wont believe how good these taste till you try them. Let us know what you think :)

What you need:

  • 150 g grated carrot 
  • 165 g almond meal ( cups)
  • 1/4 cup honey
  •  tbsp ground cinnamon
  • 1 tsp vanilla essence
  • 1 orange/s -zest 
  • 2 tbsp coconut oil -melted
  • 200g dark chocolate (75% or higher)
  • 1 tbsp coconut oil

What to do:

  • Place the carrot, almond meal, honey, cinnamon, vanilla, orange zest and coconut oil in a blender and mix until well combined.
  • Roll into balls and place on a tray lined with a baking sheet. If the mixture is too wet to roll into balls, either add a little more almond meal or chill in the fridge to firm. It can be a little sticky but easily rolled. 
  • Place in the freezer for 30 minutes while you make the chocolate shell.
  • Boil a small amount of water pot, then turn turn down to a gentle simmer. Place a bowl over it and add half the chocolate. Stir to melt then add the coconut oil. Add the remaining chocolate and stir until completely melted.
  • Remove the balls from the freezer. Use two forks to toss the carrot balls in the melted chocolate until covered and place back on the tray.
  •  Store In the freeze for a couple of weeks. Best served straight from the freezer.
