Choc Vege Brownie

What you need:

120g raw grated kumera
120g raw grated zucchini 
100g butter or coconut oil, melted
1/4 - 1/2 cup rice malt syrup OR maple syrup OR honey (sweeten to taste)
2 free-range or organic eggs
1⁄4 cup cacao powder
40g coconut flour
1 teaspoon bicarbonate of soda, activated (mixed) with a teaspoon of vinegar
½ cup of frozen blueberries 
¼ cup dark choc chip 

What to do:

Preheat your oven to 180oC/350oF
Line a standard slice tin
In a large bowl, blender or processor, mix together the vegetables, butter, sweetener and eggs until combined.
Add the cacao, coconut flour, activated bicarbonate of soda and sea salt and mix for about 10 seconds or until combined.
Gently fold in the blue berries 
Spoon the batter into the lined tin.
Sprinkle the chocolate chips over the top
Bake for 30 minutes or until the centre is firm to touch or a skewer inserted comes out clean. 
Enjoy straight from the oven or cold for a snack.
