Green Goddess Dressing

We are all about the small things. The tiny wee changes that are manageable and maintainable. Every small nurturing change you make add up to BIG health improvements. This right here is one of those small changes that will have a big impact!

If you are a dressing fan, swap out your pre-made fave for this wee gem. Packed with flavour AND nutrition this really should be your new favourite thing!

What you need:

1 cup plain Greek yogurt, preferably full-fat. Raglan Coyo works well here too

1 cup lightly packed fresh herbs (tender stems are fine): use coriander, parsley, dill, basil and/or mint, with up to ¼ cup chives or green onion (sliced into 2cm pieces)

1 medium clove garlic, roughly chopped

½ teaspoon fine sea salt

Lots of freshly ground black pepper, to taste

What to do:

Combine all ingredients in a food processor. Blitz until smooth and green, with tiny flecks of herbs.

 Taste, and add more salt or pepper if desired.

Use as desired, or cover and refrigerate for later. 

This dressing will keep well in the fridge for 5 to 7 days.
