Zucchini Slice
This is a great lunch for the family. This zucchini slice is full of nutrition and the cheese and bacon add a total taste treat. The kids will love it. Great hot or cold in a lunch box or make a double size and reheat for lunch or dinner the next day. Enjoy!!
INGREDIENTS
- 3 zucchinis (grated)
- 1 onion, finely chopped
- 200g rindless streaky bacon (finely diced)
- 1 ½ cup grated cheese
- 1 cup self-raising flour
- 3 TBSP olive oil
- 7 eggs
- Salt and pepper
- 6 cherry tomatoes (halved)
METHOD
- Preheat oven 180°C/160°C (fan-forced)
- Grease and line a 30 x 20cm (base measurement) pan with baking paper.
- Combine grated zucchini, onion, bacon, cheese and flour together in a bowl.
- Whisk the eggs together with the oil and stir into flour mixture.
- Season with salt and pepper.
- Pour into the prepared pan and smooth the surface.
- Arrange cherry tomatoes over the top.
- Bake 35-40 minutes or until top is golden.
- Serve hot or cold with a green salad and your favourite crusty bread.....YUMMM :)
