Zucchini Slice

This is a great lunch for the family. This zucchini slice is full of nutrition and the cheese and bacon add a total taste treat. The kids will love it. Great hot or cold in a lunch box or make a double size and reheat for lunch or dinner the next day. Enjoy!!


  • 3 zucchinis (grated)
  • 1 onion, finely chopped
  • 200g rindless streaky bacon (finely diced)
  • 1 ½ cup grated cheese
  • 1 cup self-raising flour 
  • 3 TBSP olive oil
  • 7 eggs
  • Salt and pepper
  • 6 cherry tomatoes (halved)


  1. Preheat oven 180°C/160°C (fan-forced)
  2. Grease and line a 30 x 20cm (base measurement) pan with baking paper.
  3. Combine grated zucchini, onion, bacon, cheese and flour together in a bowl.
  4. Whisk the eggs together with the oil and stir into flour mixture.
  5. Season with salt and pepper.
  6. Pour into the prepared pan and smooth the surface.
  7. Arrange cherry tomatoes over the top.
  8. Bake 35-40 minutes or until top is golden.
  9. Serve hot or cold with a green salad and your favourite crusty bread.....YUMMM :)
